Weekly Menu for May 8, 2023

 Hello, Friends!  I'm back with another weekly menu.  I know, I missed last week.  I didn't feel too good at the beginning of the week and then after I was busy the rest of the week and missed coming back to chat.  Weigh in was good for the last two weeks.  I lost 2.6 over them.  BUT, I ate off plan over last weekend and truthfully was up 3.2 on Monday morning when I started the Summer Slim Down Challenge in the Optavia group I'm in.  So since Monday I have lost 4.5 at the writing of this.  And if you notice, there is a correlation between eating off plan, not feeling good and weighing more.  One day I might learn that my body doesn't do well with certain foods.

Speaking of the Summer Slim Down Challenge, they challenged us to set two goals, one scale victory and one non-scale.  My scale victory is to be down 10 pounds (13.9 if you count where I started on the 1st). I'm looking at numbers I have not seen since 2015ish. My non-scale victory was going to be to fit into a pair of bluejean shorts I bought that did not fit when I bought them.  I tried them on to see where I was with the fit and guess what?!  THEY FIT!  In fact, I have them on today!  So, I had to pick a different NSV.  When I bought those denim shorts, I also grabbed a pair of the cutest spearmint green Levi shorts with an elastic waistband.  They are sized XL.  They don't fit at all.  They're literally the smallest pair of XL shorts I've ever seen.  I buy XL often.  So, my goal is to have them slide on.  Even if they're tight as all get out.

In order to meet those goals, I need to eat good in the evenings.  So, without further ado, here's the plan for the week...


Monday - cilantro lime fish tacos
Tuesday - spaghetti.  Billy requested this after he saw a tiktok about a spaghetti sandwich LOL  I'll make the sauce and fix noodles for him and spaghetti squash for me.
Wednesday - chicken strips, green beans and mac and cheese.  I'm craving chicken nuggets.  I"ll use almond flour instead of regular flour to make them.  I also won't eat the mac and cheese.  I plan on putting cheese on the rest of the spaghetti squash from the previous night.
Thursday -  shrimp Cobb salad.
Friday - left overs

I'll be back during the week with a couple recipes I've loved from the last couple weeks.  I'm sure you'll like them too.

I won an ARC of this on Goodreads - thank you so much!  I enjoyed it so much! My favorite romances are of the Regency period and this is that time period.  But that is where all similarities to others end.  Mrs. Russell (I just can't bring myself to call her Martha LOL) is a new widow who comes to realize she will loose her home and her dowry if she doesn't produce a male heir.  The kicker to this is that the late Mr. Russell's brother is a total jerk-face who has taken advantage of women in their home when he lived there as a young man.  Enter Mr. Theo Mirkwood...the rogue who has been sent to the country as a punishment by his father.  Mrs. Russell employs Mr. Mirkwood as her "stud" for a month so she can conceive a child and claim the inheritance.   Mrs. Russell believes she can't take any pleasure from their daily (later it becomes nightly) encounters.  Theo eventually changes her mind.  Martha is so set on her plan to thwart her late hus

So Harley has this interview to do

for church. She's suppose to interview one of the "older" members of the church about their Christmas memories and she'll have a presentation to do in front of the whole church at one of our Christmas programs. That is all fine and dandy, but she's in 3rd grade. Can you see her trying to take notes for when they answer her question of "what is your most memorable Christmas memory?" There is no way she can write even half way fast enough to get it down. I understand what they're trying to do and it's great! But what were they thinking asking a 3rd grader to do it? We have tons of 6th graders...let them do it. I'm tempted not to even bring her tonight for it. What should I do?
