Honey Sriracha Roasted Salmon Rice Bowls

 Last week's menu had Honey Sriracha Roasted Salmon Rice Bowls on it.  Billy wasn't impressed.  I however, was impressed.  I was so impressed I not only ate mine, but I ate his (he only took one bite) the next day.  In his defense, he's not a fan of salmon, where I will eat almost any seafood. I've been a fan of Gina Homolka for several years.  I have all her cookbooks and her website,  SkinnyTaste , has been bookmarked in my browser since I found it.  Her recipes are delicious and she gives the WW points for them.  Very helpful if you are following WW.  Gina publishes a weekly menu plan that I have followed before.  As I was browsing her website, I noticed the recipe for Honey Sriracha Roasted Salmon Rice Bowls.  It looked good so I decided to give it a try.  Happy June, everyone!  Summer is almost here.  Most people are gearing up for vacations and get togethers.  In our family, we are getting ready to trade homes.  Both Lola and the Squirrels are moving this summer.  On the same day.  How am I supposed to pick who to help?   Actually, we will be helping Lauren move first.  She has to be out of her apartment by midnight July1...which is also her birthday.  She and Agent J are moving into a newer three bedroom, two bath apartment with their fur baby, Ridge.  They are super excited. The Squirrels have are moving out of their apartment in Tuscaloosa and into a two bedroom house.  They have most of the month of July to do it though.  While they have more time, it meant we have to pay double rent for them in July and we need to find some living room furniture.  Their current apartment is furnished while the house is not.  Harley wants a new bed as well.  She ha...

BBQ Chicken Salad

 One of my favorite things to eat, especially during the warmer months, is a salad.  A little side salad is not what I am talking about.  While I do enjoy those, I am talking about a salad that will fill you up on it's own. While I was digging through food blogs and websites, I ran across several BBQ salad recipes and figured I would try it.  I fell in love!  So when Hubs said he was grilling night before last, I had him throw some chicken on the grill so I could make the salad. Harley and Mallory came for a visit last night and were thrilled to know this is what was for dinner.  Mallory said she could have eaten the whole bowl herself.  And I don't doubt it for one minute LOL   This is easy peasy to throw together.  I added BBQ sauce to my serving.  Not everyone in the house wanted extra BBQ sauce on theirs.  Here's the recipe: about 6 cups mixed greens - I used spinach, iceburg and romaine lettuce 2 ch...

Chocolate Chip Cookie Dough Fudge

Chocolate chip cookie dough fudge.  Yeah, yeah.  I know that doesn't sound like it goes with the all the diet talk from yesterday. That would be correct, oh wise one.  But in my defense I did use fat free sweetened condensed milk.  You couldn't even tell.  And the sweetened condensed milk was still good enough to eat with a spoon. Which I did. But only 3 spoonfuls. Then I covered it and put the rest in the fridge for later HAHAHA And I only ate one piece of fudge.  It hit the spot. I'll send some home with Lauren for her and Graem to enjoy. So, to even out the fudge, I made skinny chimichangas and steamed broccoli.  It was tasty.  Lauren and I weren't too sure about the chimichangas and how only 1/2 pound ground meat would make dinner, but it easily made 4 chimichangas.  I was surprised.  And now I have lunch for tomorrow :) In case you're wondering, I got the recipe for the Skinny Chimichangas off of Kitchme ...

Chicken Stew

In case you didn't know, I'm a Cajun girl who now lives in Alabama.  Me being Cajun means I cook things like gumbo and jambalaya and when people I meet find out I'm from there, they always ask me to cook something for them LOL  Sooo, going back to that original thought (I'm a Cajun girl), when I planned our Saturday night family meal, I really wanted some of my mom's chicken stew.  I'll be honest and say that rice is NOT one of my favorite things to cook or eat.  My girls on the other hand, would eat rice and gravy every stinking day (thanks, Mom).  I had an idea of how to make it, but I called Mom just to make sure I was going in the right direction,  cause you know there's nothing worse than really craving something, knowing how it's supposed to taste and then it not living up to your expectations.  Here's the directions I got.... Make a roux.  Not too dark, but dark enough.  You know,  a little darker than coffee milk.  Then ...

Lame title to a blog post, I know.  But, truly, I am sooo hungry.  And the chicken just won't cook faster, no matter how hard I try.  Are you curious as to what I'm cooking for dinner tonight?  Well, here it is.... Creamy Spicy Corn Chowder with Chicken 2 slices bacon, sliced in 1 inch strips 1 med yellow onion, diced 1 jalapeno, seeded 1 russet potato, diced 1 small red pepper, diced 3 cups frozen corn kernels, thawed Kosher salt and freshly ground black pepper 1 TBSP chopped fresh thyme leaves 2 cups milk 3 cups chicken broth 2 cups shredded rotisserie cooked chicken Fresh cilantro leaves, for garnish 1 lime, cut into wedges In a large sauce pot over medium heat cook bacon until crispy and all fat has rendered out.  Remove with a slotted spoon to a paper towel lined plate.  Drain off all by 1 tablespoon fat, add onion, jalapeno, potato, red pepper, corn, salt and pepper and saute for about 5 minutes.
