BBQ Chicken Salad

One of my favorite things to eat, especially during the warmer months, is a salad.  A little side salad is not what I am talking about.  While I do enjoy those, I am talking about a salad that will fill you up on it's own.

While I was digging through food blogs and websites, I ran across several BBQ salad recipes and figured I would try it.  I fell in love!  So when Hubs said he was grilling night before last, I had him throw some chicken on the grill so I could make the salad.

Harley and Mallory came for a visit last night and were thrilled to know this is what was for dinner.  Mallory said she could have eaten the whole bowl herself.  And I don't doubt it for one minute LOL

This is easy peasy to throw together.  I added BBQ sauce to my serving.  Not everyone in the house wanted extra BBQ sauce on theirs.  Here's the recipe:

about 6 cups mixed greens - I used spinach, iceburg and romaine lettuce
2 chopped tomatoes
about 1/3 of a red onion diced
corn sliced off 2 mini ears - you could easily used canned or frozen
2 grilled chicken breasts roughly chopped
about a 1/2 cup of shredded colby and cheddar mix
Ranch dressing on top

Like I said, easy peasy.  Season it to your liking with salt and pepper and enjoy!  Let me know if you have a favorite salad so I can try it :)

Until next time...

Make it work....

OK. So, the fabric I got from the challenge isn't tooooo bad together :) I'm making it work. My problem is with the trims. What am I suppose to do with the ribbon and lace??? Maybe a lace rose? Ribbon straps?with suspender clips? AACCKKK!!!! I'd post a pic and get suggestions but my rules said I can't do that. Soooo, I guess I'm on my own. I'll keep you posted! In other designing news...I've got a Valentine set finished. It goes in the mail tomorrow to the model. I got more Valentine fabric to sew. Not sure what I'm doing with it yet though. And another Valentine set planned, but with not overly Valentine fabric so it could be worn later in the year. Pretty, isn't it? Andddd...be on the lookout for a new website. www.boutiquerascals.com I'll have my wonderful creations for sale there and there will be lots of great things from all my Rascal buddies. We'll have clothes, bows, purses, jewelry, tooth fairy pillows, lots of great things!...

Hello October!

Hello friends! It's been a while since I've been on here. I've read a bunch of books, eaten some yummy foods, sewn a lot of quilt blocks and stitched a lot of stitches. I've also had a wonderful vacation to Disney with the WHOLE family! Let me just tell you, it was HOT there. Yes, I know it's Florida and it's supposed to be hot.  But ya'll.  I'm originally from south Louisiana,  I get heat and humidity, but this was overwhelming lol the heat indexes were upper 90s and hit 101. In mid-September. But we still had a marvelous time. We rode all the rides we were aiming for and ate most of the snacks we planned for. And we got in two of our traditions-Boston Lobster Fest and mini-golf!  I totally went off any eating plan while there.  Mind you, I am not really on an eating plan right now, but I didn't overthink food.  If I wanted the fish and chips from the England pub at EPCOT, I ate...

Ready for the rodeo?

Well, after being away from sewing and listing and selling for a couple of years, I've finally got something new up. I used an adorable cowboy and cowgirl fabric from Michael Miller and made this skirt and top that would be perfect for a trip to the rodeo. Or it would be great for western day at school. Feel free to check it out...even bid on it ;0) http://cgi.ebay.com/Custom-Boutique-Rascals-Western-Cowgirl-CBD-FCBM_W0QQitemZ280255354898QQihZ018QQcategoryZ79714QQssPageNameZWDVWQQrdZ1QQcmdZViewItem
